Ribs - our ribs are dry rubbed overnight and then slow cooked for 7 hours in our smoker. To ensure your Barbacoa Rib Experience is a great one, we "paint" every order of ribs with another layer of sauce just before they are handed to you.

Brisket - we dry rub and age our brisket overnight and then they are smoked for 15 hours, along with our ribs. When you order the brisket by itself, as a meal package, or a Po-Boy sandwich, our brisket is finished over the same open flame as the ribs.
